Recipes from the Farm Back to Recipes page SUMMER SQUASH CASSEROLE Originally posted 6/27/2002 Ingredients: 3c squash, steamed, drained 2 eggs beaten into 1c milk (or plain soy milk) 1c grated cheese (smoked gruyere makes it fantastic) 1c chopped onions, sauteed in olive oil 1/4t white pepper, OR 1/2t black pepper 1t salt 2c whole wheat (or white) bread crumbs, sauteed in 2t olive oil 'til lightly brown Directions: Mix all ingredients together, being sure to really mash the squash. (Using the food processor is easiest since you can make your bread crumbs, grate your cheese, and mix it all together in one place.) Bake at 375 'til the middle is set, or the outside edges pull away from the sprayed baking dish. (Using the 9.5" x 7" pan to our toaster oven let us bake it in about an hour, in the toaster oven, without heating up the whole house.) 6 Servings This recipe comes from member Theresa Jack.
