Recipes from the Farm      Back to Recipes page Cucumber Salsa      Originally posted 8/10/2008 Ingredients: -2 medium cucumbers - peeled, seeded, and chopped -1 small onion, chopped -1 clove garlic, minced -2 tablespoons lime juice -2 radishes, chopped -2 teaspoons minced fresh cilantro -1/2 teaspoon salt Directions: Combine the cucumbers, tomatoes, jalapeno, onion garlic, lime juice, radishes, cilantro and salt. Mix well cover and refrigerator for at least an hour, serve with tortilla chips. (It is a lot better if you leave it over night but a minimum of one hour)
