Swiss Chard and Creamy Pasta      Originally posted 2/27/2006

Ingredients:
> 1 lb. swiss chard
> 1 tbsp olive oil
> 2 cloves garlic, chopped
> 1/4 cup chopped onion
> 2 large tomatoes, chopped
> 1/2 cup sour cream or plain yogurt
> 1/2 cup lowfat milk
> 1/4 cup parmesan/romano cheese (your pick)


Directions:
> Wash swiss chard, cut into small pieces. Heat oil in large 2-quart saucepan over medium-high heat, 1-2 minutes. Add swiss chard, garlic and onion, cooking 1-2 minutes, stirring occasionally. Add tomatoes, sour cream (or yogurt), milk, parmesan cheese. Stir until blended and cheese melts. Serve over pasta or rice. Add salt and pepper to taste.
