African Pineapple Peanut Stew      Originally posted 5/17/2004

Ingredients:
1 C chopped onions 2 minced garlic cloves 1 T veg oil 4 c swiss chard or kale, sliced 2C undrained canned crushed pineapple 1/2 C peanut butter 1T tabasco or hot sauce 1/2 C chopped cilantro salt to taste chopped peanuts chopped scallions

Directions:
saute onions and garlic in oil in covered saucepan for 10 min stirring frequently..........clean greens and discard any large stems, cut into 1" strips..........add pineapple and its juice to pot and simmer ..........stir in greens, cover and simmer 5 minutes.................mix in pb and hot sauce, and cilantro.......sprinkle with peanuts and scallions.........serve over couscous or brown rice.........serves 4
