Stuffed Peppers      Originally posted 10/31/2003

Ingredients:
4 Farmer Fred's Green Peppers (maybe more!) 1 pound ground beef or turkey beef 1 tablespoon chopped onion 2 tomatoes (or lots of cherry tomatoes) 1 cup tomato sauce 1/2 cup instant rice 1/2 cup water 1/4 teaspoon salt 1/8 teaspoon ground black pepper

Directions:
Preheat oven to 350 degrees. Slice tops from peppers about 1/4 way down and remove seeds. Remove stems from tops and discard stems. Dice tops (or use extra diced green or red peppers or add a hot jalapeno!). Heat a skillet on med-high, add beef and onion; brown and drain excess fat. Stir diced peppers, diced tomatoes, tomato sauce, instant rice, water, salt and black pepper. When softened, remove mixture from heat and spoon into prepared peppers. Place in and 8X8X2 inch baking dish. Bake for 40 to 50 minutes or until bell peppers are tender. Makes 4 servings (or more!).
