Leeks & Brown Rice      Originally posted 10/21/2003

Ingredients:
2 Tablespoons vegetable oil 2 Cups finely-chopped leeks 1 Cup brown rice 2 Cups chicken or vegetable stock or water Salt & Pepper to taste

Directions:
Saute leeks in vegetable oil slowly until soft and transparent. Add rice and cook for 2-3 minutes, stirring to coat rice grains with oil. Add stock or water, and salt & pepper to taste; boil for 3 minutes. Cover and simmer for 40 minutes. Set aside for 15 minutes before serving. Thanks to member Jennifer Maher for this recipe.
