Okra and Tomatoes      Originally posted 7/30/2003

Ingredients:
2 tablespoons unsalted butter 1/2 onion, chopped 1 clove garlic, very finely chopped 1/2 cup red wine, optional 1 1/2 lb okra, stems trimmed, cut into 1/2-inch pieces 4 tomatoes, chopped 2 sprigs thyme, leaves chopped 2 bay leaves salt and black pepper

Directions:
Heat butter in shallow pan, medium heat. Add onion and garlic, cook unitl pale golden, about 3 minutes. Add wine, cook, stir occasionally until wine has reduced by half. Add okra and tomatoes. Add thyme and bay leaves. Season w/ salt and pepper. Cover and reduce heat to simmer. Cook, stirring occasionally unitl veggies are fok tender, about 15 minutes. Remove bay leaves and serve.
